Ingredients

- 3 lbs beef brisket
- 2 large onions, sliced
- 1/2 cup balsamic vinegar
- 2 cups beef broth
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp brown sugar
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
Instructions
- Season the brisket with salt and pepper.
- Heat olive oil in a large pot over medium-high heat. Sear the brisket on both sides until browned, then remove.
- Add onions and garlic to the pot. Cook until softened.
- Stir in balsamic vinegar, beef broth, brown sugar, and thyme.
- Return the brisket to the pot. Cover and simmer on low heat for 3-4 hours until tender.
- Slice the brisket and serve with the onion sauce.
Notes
- For best results, marinate the brisket overnight.
- You can cook this in a slow cooker on low for 8 hours.
- Adjust sweetness by adding more or less brown sugar.
