- 1/2 lb breakfast sausage
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 4 eggs (optional)
- 1/4 cup shredded cheddar cheese (optional)
- Chopped green onions for garnish
Instructions
- Preheat oven to 425°F. Bake tater tots for 20-25 minutes until crispy.
- Cook sausage in a skillet over medium heat until browned. Remove and set aside.
- Melt butter in the same skillet. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Cook for 3-5 minutes until thickened.
- Stir in cooked sausage, salt, pepper, garlic powder, and onion powder.
- Fry or scramble eggs if using.
- Divide tater tots among bowls. Top with sausage gravy, eggs, cheese, and green onions.
Notes
- For a spicier kick, use hot breakfast sausage.
- Substitute milk with half-and-half for a creamier gravy.
- Reheat leftovers in the oven to keep tater tots crispy.
