- 4 cups sliced fresh rhubarb
- 4 cups sliced fresh strawberries
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup brown sugar, packed
- 1/2 cup all-purpose flour
- 1/2 cup butter, softened
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine rhubarb, strawberries, granulated sugar, 1/4 cup flour, and vanilla extract. Mix well and pour into a greased 9×13 inch baking dish.
- In another bowl, combine oats, brown sugar, 1/2 cup flour, softened butter, and cinnamon. Mix until crumbly.
- Spread the oat mixture evenly over the fruit mixture in the baking dish.
- Bake for 45-50 minutes or until the topping is golden brown and the fruit is bubbly.
- Let cool slightly before serving. Enjoy warm with ice cream or whipped cream.
