- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 can black beans, rinsed and drained
- 2 cups romaine lettuce, chopped
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1 avocado, diced
- 1 cup tortilla chips, crushed
- Optional: sour cream and jalapeños for serving
Instructions
- In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
- Add the taco seasoning to the meat along with 1/4 cup of water. Stir and simmer for 5 minutes until the sauce thickens.
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, corn, black beans, and diced avocado.
- Add the cooked meat to the salad mixture and toss to combine.
- Top the salad with shredded cheese, salsa, and crushed tortilla chips.
- Serve immediately, garnished with sour cream and jalapeños if desired.
