A delicious sweet potato casserole topped with marshmallows.
Ingredients

- 4 cups mashed sweet potatoes
- 1 cup brown sugar
- 1/2 cup milk
- 1/4 cup butter
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix mashed sweet potatoes, brown sugar, milk, butter, eggs, and vanilla.
- Spoon the mixture into a greased baking dish.
- Top with mini marshmallows.
- Bake for 25-30 minutes until heated through and marshmallows are golden.
Notes
- Store leftovers in the refrigerator.
- Can be made ahead and baked before serving.
