A warm and comforting sweet potato soup.
Ingredients

- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground ginger
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- 1/2 cup coconut milk
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add sweet potatoes, broth, ginger, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Puree the soup with an immersion blender.
- Stir in coconut milk and heat through.
- Serve hot.

- Adjust seasoning to taste.
- Add toppings like croutons or herbs if desired.
- Store leftovers in the fridge for up to 3 days.
