Ingredients

- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add sweet potatoes, ginger, and cumin; stir well.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
- Puree the soup using an immersion blender.
- Stir in coconut milk and season with salt and pepper.
- Serve hot, garnished with your choice of herbs.
