Ingredients

- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt to taste
- 2 cups vegetable broth
Instructions
- Heat a large pot over medium heat.
- Add onion and bell pepper, sauté until softened.
- Add garlic and cook for another minute.
- Add sweet potatoes, chili powder, cumin, and salt.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and let simmer for 20-25 minutes.
- Add black beans and kidney beans, cook for another 10 minutes.
- Serve hot.

- Top with avocado or cilantro if desired.
