Description
A warm and nutritious sweet potato carrot soup.
Ingredients

- 2 large sweet potatoes, peeled and diced
- 3 medium carrots, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add the sweet potatoes and carrots, stirring for a few minutes.
- Pour in the vegetable broth.
- Add ginger, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Blend the soup until smooth.
- Serve warm.

- Store leftovers in the fridge for up to 3 days.
- This soup can be frozen for later use.
