- 1 whole chicken (about 4 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 2 ears sweet corn, halved
- 4 tbsp butter, melted
- 1 lemon, juiced
Instructions
- Preheat oven to 375°F.
- Rub chicken with olive oil, salt, pepper, garlic powder, and paprika.
- Place chicken in a roasting pan and add sweet corn around it.
- Roast for 1 hour 15 minutes or until internal temperature reaches 165°F.
- Mix melted butter with lemon juice to make the sauce.
- Drizzle sauce over chicken before serving.
