A simple and flavorful whole roast chicken served with buttery rice and green beans. Perfect for a family meal.
Ingredients

- 1 whole chicken (about 4 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 lemon, halved
- 4 cloves garlic, smashed
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tbsp butter
- 1 lb green beans, trimmed
- 1 tbsp butter (for green beans)
Instructions
- Preheat oven to 375°F (190°C).
- Pat the chicken dry and rub with olive oil.
- Season the chicken with salt, pepper, garlic powder, and paprika.
- Stuff the cavity with lemon halves and garlic.
- Place the chicken in a roasting pan and roast for 1 hour 15 minutes, or until internal temperature reaches 165°F (74°C).
- While the chicken cooks, prepare the rice by boiling chicken broth, then adding rice and butter. Simmer covered for 15 minutes.
- Steam or sauté green beans with butter until tender.
- Let the chicken rest for 10 minutes before carving.
- Serve with rice and green beans.
Notes
- Use a meat thermometer for accurate doneness.
- Adjust seasoning to taste.
- Leftover chicken can be stored for up to 3 days.
