Ingredients

  • 1 whole chicken (about 4 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 lemon, halved
  • 4 cloves garlic, smashed
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp butter
  • 1 lb green beans, trimmed
  • 1 tbsp butter (for green beans)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the chicken dry and rub with olive oil.
  3. Season the chicken with salt, pepper, garlic powder, and paprika.
  4. Stuff the cavity with lemon halves and garlic.
  5. Place the chicken in a roasting pan and roast for 1 hour 15 minutes, or until internal temperature reaches 165°F (74°C).
  6. While the chicken cooks, prepare the rice by boiling chicken broth, then adding rice and butter. Simmer covered for 15 minutes.
  7. Steam or sauté green beans with butter until tender.
  8. Let the chicken rest for 10 minutes before carving.
  9. Serve with rice and green beans.
