Ingredients

- 4 boneless, skinless chicken breasts
- 1/4 cup sweet chili sauce
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh cilantro
- 1 tbsp chopped fresh mint
Instructions
- Preheat grill to medium-high heat.
- In a bowl, mix sweet chili sauce, lime juice, olive oil, garlic, salt, and pepper.
- Coat chicken breasts with half the sauce mixture.
- Grill chicken for 6-7 minutes per side or until internal temperature reaches 165°F.
- Brush remaining sauce over chicken during the last 2 minutes of grilling.
- Remove from grill and top with chopped cilantro and mint.
Notes
- Marinate chicken for 30 minutes for extra flavor.
- Adjust chili sauce for more or less spice.
- Serve with rice or a fresh salad.
