- 1 whole chicken (about 3–4 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 4 large potatoes, cut into fries
- 2 cups shredded cabbage
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1 tbsp sugar
- 1/2 tsp celery seed
Instructions
- Preheat oven to 375°F (190°C).
- Rub the chicken with olive oil, salt, pepper, garlic powder, and paprika.
- Place the chicken in a roasting pan and roast for 1 hour 30 minutes or until the internal temperature reaches 165°F (74°C).
- While the chicken roasts, toss the potato fries with olive oil, salt, and pepper, then bake for 30 minutes until crispy.
- In a bowl, mix shredded cabbage, mayonnaise, lemon juice, sugar, and celery seed to make coleslaw.
- Let the chicken rest for 10 minutes before carving.
- Serve the roast chicken with crispy fries and creamy coleslaw.

- Use a meat thermometer to check doneness.
- Adjust seasoning to taste.
- For extra crispy fries, bake at a higher temperature (400°F/200°C).
