Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 lb shrimp, peeled and deveined
  • 4 oz feta cheese, crumbled
  • 1/2 tsp red pepper flakes
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. Heat olive oil in a pan over medium heat. Add garlic and shrimp, cook for 2-3 minutes per side.
  3. In a large bowl, combine pasta, shrimp, cucumber, tomatoes, red onion, and parsley.
  4. Add feta, red pepper flakes, lemon juice, salt, and pepper. Toss gently.
  5. Chill for 30 minutes before serving.
