Ingredients

  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes, or until water is absorbed.
  4. Remove from heat and let it cool.
  5. In a large bowl, mix tomatoes, cucumber, bell pepper, olive oil, lemon juice, salt, and pepper.
  6. Add cooled quinoa and stir to combine.
  7. Garnish with fresh parsley before serving.
