- 1 cucumber, diced
- 1 red onion, finely chopped

- 2 tablespoons of balsamic vinegar

- 1 cup of mozzarella balls
Instructions
- Preheat your grill to medium heat.
- In a large bowl, combine cherry tomatoes, cucumber, and red onion.
- In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.
- Pour the dressing over the vegetable mixture and toss well.
- Add the mozzarella and fresh basil, gently folding to combine.
- Grill the vegetables on skewers for about 5-7 minutes until slightly charred.
- Serve the grilled vegetables alongside the salad mixture.
