- 1 teaspoon white vinegar
- 1 tablespoon cornstarch
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for whipping cream)
- 2 cups mixed summer berries (strawberries, blueberries, raspberries)
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your oven to 275°F (135°C) and line a baking sheet with parchment paper.
- In a clean mixing bowl, whisk the egg whites until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff peaks form and the mixture is glossy.
- Gently fold in the vanilla extract, white vinegar, and cornstarch until just combined.
- Spoon the meringue onto the prepared baking sheet, shaping it into a circle with a slight dip in the center.
- Bake for 1 hour, then turn off the oven and let the meringue cool completely inside the oven.
- Once cooled, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Spread the whipped cream over the cooled meringue and top with mixed summer berries.
- Garnish with fresh mint leaves if desired. Serve immediately.
Notes
- Make sure your mixing bowl and whisk are completely clean and dry to ensure proper whipping of the egg whites.
- You can use any combination of summer berries based on your preference and availability.
- For best results, assemble the pavlova just before serving to prevent the meringue from becoming soggy.
