These delicious summer BBQ chicken skewers are marinated in a zesty garlic and lime sauce, grilled to perfection, and served with a fresh side salad.

- 1 pound chicken breast, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1 bell pepper, cut into squares
- 1 onion, cut into squares
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together olive oil, lime juice, garlic, paprika, salt, pepper, and cumin.
- Add chicken cubes to the marinade and coat well. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, bell pepper, and onion onto the skewers, alternating between chicken and veggies.
- Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve with a fresh side salad or your favorite BBQ sides.
