A delicious and hearty stuffed peppers recipe filled with rice, ground meat, and spices, perfect for a family dinner.

- 4 large bell peppers (any color)
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 can (15 oz) diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
- Add ground beef or turkey to the skillet and cook until browned. Drain excess fat.
- Stir in cooked rice, diced tomatoes (with juices), Italian seasoning, salt, and pepper. Mix well.
- Stuff each bell pepper with the meat and rice mixture, packing it in tightly.
- Place the stuffed peppers upright in a baking dish. Pour a little water into the bottom of the dish to help steam the peppers.
- Cover with foil and bake for 30 minutes.
- Remove the foil, sprinkle cheese on top of each pepper, and bake uncovered for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
