Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  4. Add ground beef or turkey to the skillet and cook until browned. Drain excess fat.
  5. Stir in cooked rice, diced tomatoes (with juices), Italian seasoning, salt, and pepper. Mix well.
  6. Stuff each bell pepper with the meat and rice mixture, packing it in tightly.
  7. Place the stuffed peppers upright in a baking dish. Pour a little water into the bottom of the dish to help steam the peppers.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil, sprinkle cheese on top of each pepper, and bake uncovered for an additional 10-15 minutes, until the cheese is melted and bubbly.
  10. Let cool for a few minutes before serving.
