- 4 boneless chicken breasts
- 1 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix spinach, cream cheese, mozzarella, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the mixture.
- Heat olive oil in a skillet over medium heat.
- Sear the stuffed chicken for 3-4 minutes on each side until golden.
- Transfer the chicken to a baking dish.
- Bake in the oven for 25-30 minutes or until cooked through.
Notes
- Serve with a side salad or roasted vegetables.
- Can substitute chicken with turkey breast.
- Store leftovers in the refrigerator for up to 3 days.
