A hearty dish featuring roasted butternut squash stuffed with a creamy gratin filling.
Ingredients

- 1 medium butternut squash
- 1 tbsp olive oil
- 1/2 cup heavy cream
- 1/2 cup grated Gruyère cheese
- 1/4 cup breadcrumbs
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
Instructions
- Preheat oven to 375°F (190°C).
- Cut the butternut squash in half lengthwise and scoop out the seeds.
- Brush the squash with olive oil and roast for 30 minutes.
- Mix cream, cheese, breadcrumbs, garlic, salt, pepper, and nutmeg in a bowl.
- Fill the roasted squash halves with the mixture.
- Bake for another 20 minutes until golden brown.
Notes
- Use fresh nutmeg for better flavor.
- Substitute Gruyère with cheddar if preferred.
