Ingredients

  • 1 medium butternut squash
  • 1 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup breadcrumbs
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. Brush the squash with olive oil and roast for 30 minutes.
  4. Mix cream, cheese, breadcrumbs, garlic, salt, pepper, and nutmeg in a bowl.
  5. Fill the roasted squash halves with the mixture.
  6. Bake for another 20 minutes until golden brown.

Notes

  • Use fresh nutmeg for better flavor.
  • Substitute Gruyère with cheddar if preferred.
