  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) diced tomatoes, drained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Rub the outside with olive oil and place them upright in a baking dish.
  3. In a skillet over medium heat, add a drizzle of olive oil. Sauté the onion and garlic until translucent, about 3-4 minutes.
  4. Add the ground meat to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix until well combined.
  6. Stuff each pepper with the meat and rice mixture, packing it down gently. Top each pepper with shredded cheese.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is bubbly.
  8. Let cool for a few minutes before serving. Enjoy your stuffed bell peppers!

Notes

  • Feel free to customize the filling with your favorite ingredients, such as black beans, corn, or different spices.
  • You can make these ahead of time and refrigerate them before baking. Just add a few extra minutes to the baking time.
