Description
Delicious stuffed bell peppers filled with seasoned rice, ground meat, and topped with melted cheese.

- 4 large bell peppers, any color
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet over medium heat, cook the ground meat until browned. Drain excess fat.
- Add the cooked rice, black beans, corn, salsa, chili powder, cumin, salt, and pepper to the skillet. Stir to combine and heat through.
- Stuff each bell pepper with the meat and rice mixture, pressing down gently to pack it.
- Place the stuffed peppers upright in a baking dish. Pour a little water into the bottom of the dish to help steam the peppers.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil, sprinkle cheese on top of each pepper, and bake uncovered for an additional 10-15 minutes, until the cheese is melted and the peppers are tender.
- Garnish with fresh cilantro if desired and serve warm.
