Delicious stuffed bell peppers filled with seasoned rice, ground meat, and topped with melted cheese.


Ingredients

  • 4 large bell peppers, any color
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet over medium heat, cook the ground meat until browned. Drain excess fat.
  4. Add the cooked rice, black beans, corn, salsa, chili powder, cumin, salt, and pepper to the skillet. Stir to combine and heat through.
  5. Stuff each bell pepper with the meat and rice mixture, pressing down gently to pack it.
  6. Place the stuffed peppers upright in a baking dish. Pour a little water into the bottom of the dish to help steam the peppers.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil, sprinkle cheese on top of each pepper, and bake uncovered for an additional 10-15 minutes, until the cheese is melted and the peppers are tender.
  9. Garnish with fresh cilantro if desired and serve warm.
