  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream, plus more for brushing
  • 1 teaspoon vanilla extract
  • 4 cups fresh strawberries, hulled and sliced
  • 2 tablespoons sugar (for strawberries)
  • Whipped cream, for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Turn the dough out onto a floured surface and gently knead a few times until smooth.
  6. Roll out to about 1-inch thickness and cut into rounds using a biscuit cutter.
  7. Place on a baking sheet and brush the tops with additional heavy cream.
  8. Bake for 12-15 minutes or until golden brown. Let cool.
  9. In a separate bowl, toss sliced strawberries with sugar and let sit for 10 minutes.
  10. To assemble, slice the shortcakes in half, layer with strawberries, and top with whipped cream.
  11. Serve immediately.

Notes

  • For a richer flavor, add a teaspoon of almond extract to the shortcake dough.
  • You can use store-bought whipped cream for convenience.
