Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Pour in the chilled heavy cream and vanilla extract. Stir until just combined, being careful not to overmix.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  6. Pat the dough into a 1-inch thick rectangle. Cut out rounds using a biscuit cutter and place them on the prepared baking sheet.
  7. Bake for 15-20 minutes or until the shortcakes are golden brown. Allow to cool slightly.
  8. In a separate bowl, combine the sliced strawberries with 1/4 cup powdered sugar. Toss to coat and let sit for about 15 minutes to release their juices.
  9. For the whipped topping, beat the heavy cream, 1/4 cup powdered sugar, and 1 teaspoon vanilla extract in a mixing bowl until stiff peaks form.
  10. To assemble, slice the shortcakes in half and layer with strawberries and whipped cream. Serve immediately.

  • You can substitute the strawberries with other berries like blueberries or raspberries.
