Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup milk
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 2 cups fresh strawberries, sliced
  • as desired edible flowers for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. In a mixing bowl, beat the mascarpone cheese until smooth. In another bowl, whip the heavy cream with the powdered sugar until stiff peaks form.
  9. Fold the whipped cream into the mascarpone cheese until fully combined.
  10. Once the cakes are cool, place one layer on a serving plate. Spread a layer of the mascarpone mixture over the top, followed by a layer of sliced strawberries.
  11. Place the second cake layer on top and repeat the process: spread mascarpone mixture and top with strawberries.
  12. Decorate the top of the cake with any remaining mascarpone mixture and arrange fresh strawberries and edible flowers on top.
  13. Refrigerate for at least 1 hour before serving to set the layers.
