- 2 cups fresh strawberries, hulled and sliced
- 3/4 cup granulated sugar, divided
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- In a medium bowl, combine the sliced strawberries and 1/4 cup of sugar. Let sit for about 30 minutes to macerate.
- Using a fork or potato masher, mash the strawberries until they are mostly pureed but still have some chunks.
- In a separate large bowl, whisk together the remaining 1/2 cup of sugar, heavy cream, whole milk, vanilla extract, and lemon juice until the sugar is dissolved.
- Add the mashed strawberries to the cream mixture and stir until well combined.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
Notes
- For a smoother texture, blend the strawberries into a puree instead of mashing them.
- You can add additional mix-ins like chocolate chips or crushed cookies during the last few minutes of churning.
- If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze, stirring every 30 minutes until set.
