Ingredients

  • 2 (3.4 oz) packages instant pistachio pudding mix
  • 4 cups milk
  • Green food coloring (optional)
  • Whipped cream, for topping
  • Green sprinkles, for garnish
  • Chocolate coins or gold foil-wrapped candies (optional)

Instructions

  1. In a large bowl, whisk together the instant pistachio pudding mix and milk for about 2 minutes, or until thickened.
  2. If desired, add a few drops of green food coloring and mix until the desired color is achieved.
  3. Spoon the pudding into serving cups, filling them about halfway.
  4. Add a layer of whipped cream on top of the pudding in each cup.
  5. Top with additional sprinkles and a chocolate coin or gold foil-wrapped candy if using.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a fun twist, you can use different flavored pudding mixes with green food coloring.
  • Make sure to chill the pudding cups to let the flavors meld together.
