Celebrate St. Patrick’s Day with this hearty and flavorful Irish Beef Stew, packed with tender beef, potatoes, carrots, and a rich, savory broth.

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup Guinness beer
- 4 large carrots, sliced
- 4 large potatoes, diced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides.
- Remove the beef and set aside. In the same pot, add the chopped onion and garlic, cooking until softened.
- Return the beef to the pot and add the beef broth, Guinness beer, carrots, potatoes, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover. Simmer for 2 to 3 hours, or until the beef is tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir into the stew during the last 30 minutes of cooking.
- Serve with crusty bread for a complete meal.
