Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup Guinness beer
  • 4 large carrots, sliced
  • 4 large potatoes, diced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides.
  2. Remove the beef and set aside. In the same pot, add the chopped onion and garlic, cooking until softened.
  3. Return the beef to the pot and add the beef broth, Guinness beer, carrots, potatoes, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for 2 to 3 hours, or until the beef is tender.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir into the stew during the last 30 minutes of cooking.
  • Serve with crusty bread for a complete meal.
