These festive St. Patrick’s Day marshmallows are a fun and easy treat that adds a touch of magic to your celebrations. Soft, fluffy, and coated in green, they make the perfect addition to your holiday festivities.

- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 1 cup water, divided
- 2 tablespoons unflavored gelatin
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Green food coloring
- Powdered sugar, for dusting
Instructions
- In a small bowl, combine 1/2 cup of water and gelatin. Let it sit for about 5 minutes to bloom.
- In a saucepan over medium heat, combine sugar, corn syrup, and the remaining 1/2 cup of water. Stir until the sugar dissolves.
- Bring the mixture to a boil and cook until it reaches 240°F (soft ball stage) on a candy thermometer.
- Remove from heat and stir in the bloomed gelatin until fully dissolved.
- Add salt, vanilla extract, and green food coloring to reach your desired shade of green. Mix well.
- Pour the mixture into a greased 9×13 inch baking dish and let it sit at room temperature for at least 4 hours or until set.
- Once set, dust a clean surface with powdered sugar. Turn the marshmallow out onto the surface and dust the top with more powdered sugar.
- Cut into squares and enjoy your festive St. Patrick’s Day marshmallows!
Notes
- For a fun twist, you can also dip the marshmallows in melted chocolate and sprinkle with shamrock sprinkles.
- These marshmallows can be stored in an airtight container at room temperature for up to 2 weeks.
