These festive St. Patrick’s Day marshmallows are a fun and easy treat that adds a touch of magic to your celebrations. Soft, fluffy, and coated in green, they make the perfect addition to your holiday festivities.


Ingredients

  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1 cup water, divided
  • 2 tablespoons unflavored gelatin
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Green food coloring
  • Powdered sugar, for dusting

Instructions

  1. In a small bowl, combine 1/2 cup of water and gelatin. Let it sit for about 5 minutes to bloom.
  2. In a saucepan over medium heat, combine sugar, corn syrup, and the remaining 1/2 cup of water. Stir until the sugar dissolves.
  3. Bring the mixture to a boil and cook until it reaches 240°F (soft ball stage) on a candy thermometer.
  4. Remove from heat and stir in the bloomed gelatin until fully dissolved.
  5. Add salt, vanilla extract, and green food coloring to reach your desired shade of green. Mix well.
  6. Pour the mixture into a greased 9×13 inch baking dish and let it sit at room temperature for at least 4 hours or until set.
  7. Once set, dust a clean surface with powdered sugar. Turn the marshmallow out onto the surface and dust the top with more powdered sugar.
  8. Cut into squares and enjoy your festive St. Patrick’s Day marshmallows!

Notes

  • For a fun twist, you can also dip the marshmallows in melted chocolate and sprinkle with shamrock sprinkles.
  • These marshmallows can be stored in an airtight container at room temperature for up to 2 weeks.
