- 4 cups cabbage, chopped
- 4 medium potatoes, diced
- 2 carrots, sliced
- 4 cups beef broth
- 1 tablespoon mustard
- Salt and pepper to taste
Instructions
- Rinse the corned beef under cold water.
- In a large pot, combine corned beef and beef broth.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Add potatoes, carrots, and cabbage to the pot.
- Cook for an additional 30 minutes, until vegetables are tender.
- Remove corned beef, slice, and serve with vegetables.
- Drizzle with mustard and season with salt and pepper.
