Ingredients

- 2 pounds corned beef brisket
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 4 cloves garlic, minced
- 1 onion, quartered
- 4 carrots, cut into chunks
- 2 pounds potatoes, quartered
- 1 small head of cabbage, cut into wedges
- Water, as needed
Instructions
- Rinse the corned beef under cold water.
- Place the corned beef in a large pot and add mustard seeds, peppercorns, garlic, and onion.
- Cover the beef with water and bring to a boil.
- Reduce heat, cover, and simmer for 2.5 to 3 hours.
- Add carrots and potatoes, cooking for an additional 30 minutes.
- Add cabbage and cook for another 15 minutes.
- Remove meat and vegetables from pot, slice the beef, and serve with vegetables.

- Adjust seasoning to taste.
- Serve with mustard or horseradish for extra flavor.
