Ingredients

  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns
  • 4 cloves garlic, minced
  • 1 onion, quartered
  • 4 carrots, cut into chunks
  • 2 pounds potatoes, quartered
  • 1 small head of cabbage, cut into wedges
  • Water, as needed

Instructions

  1. Rinse the corned beef under cold water.
  2. Place the corned beef in a large pot and add mustard seeds, peppercorns, garlic, and onion.
  3. Cover the beef with water and bring to a boil.
  4. Reduce heat, cover, and simmer for 2.5 to 3 hours.
  5. Add carrots and potatoes, cooking for an additional 30 minutes.
  6. Add cabbage and cook for another 15 minutes.
  7. Remove meat and vegetables from pot, slice the beef, and serve with vegetables.
