Description
A festive dinner to celebrate St. Patrick’s Day with traditional Irish flavors.
Ingredients

- 2 lbs corned beef brisket
- 1 tbsp mustard seeds
- 1 tbsp black peppercorns
- 4 cups beef broth
- 4 cups water
- 1 head cabbage, cut into wedges
- 4 large carrots, peeled and chopped
- 6 medium potatoes, peeled and quartered
Instructions
- Rinse the corned beef under cold water.
- Place the beef in a large pot and add mustard seeds, peppercorns, beef broth, and water.
- Bring to a boil, then reduce heat and simmer for 2.5 hours.
- Add potatoes, carrots, and cabbage to the pot.
- Cook for an additional 30-45 minutes until vegetables are tender.
- Remove beef and let it rest for 10 minutes before slicing.
- Serve with vegetables and broth.

- Adjust the seasoning to taste.
- Serve with Irish soda bread for a complete meal.
