Ingredients
- Rice paper wrappers – 10 pieces
- Shredded carrots – 1 cup
- Sliced cucumber – 1 cup
- Red bell pepper, julienned – 1 cup
- Fresh mint leaves – 1/2 cup
- Fresh cilantro leaves – 1/2 cup
- Cooked shrimp, sliced – 1 cup
- Dipping sauce (hoisin or peanut) – for serving
Instructions
- Prepare all ingredients and set aside.
- Soak rice paper in warm water until softened.
- Place a rice paper wrapper on a clean surface.
- Add a small amount of each filling in the center.
- Fold the sides over the filling and roll tightly.
- Repeat with remaining ingredients.
- Serve with dipping sauce.
