- 1 cup rice paper wrappers
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1 cup lettuce, shredded
- 1 cup cooked shrimp, halved
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro
- 1/4 cup dipping sauce (hoisin or peanut sauce)
Instructions
- Prepare all ingredients by cutting and shredding as needed.
- Soak rice paper wrappers in warm water for about 10 seconds until soft.
- Place a wrapper on a flat surface.
- Layer ingredients in the center: lettuce, carrots, cucumber, shrimp, mint, and cilantro.
- Fold the sides of the wrapper over the filling and roll from the bottom up.
- Repeat with remaining wrappers and filling.
- Serve with dipping sauce.
