Ingredients
- Asparagus – 1 bunch
- Peas – 1 cup

Instructions
- Prepare the asparagus by trimming off the tough ends.
- Blanch the asparagus in boiling water for 3 minutes.
- Add peas to the boiling water and cook for an additional 2 minutes.
- Drain and rinse under cold water to stop the cooking process.
- In a bowl, mix together the lemon juice and olive oil.
- Add the asparagus, peas, and mint to the bowl.
- Toss to combine and season with salt and pepper.
- Serve immediately or chill in the refrigerator before serving.
