Description
A bright and refreshing soup made with fresh spring peas, perfect for a light lunch or starter.
Ingredients

- 4 cups fresh peas (or frozen peas)
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup fresh mint leaves
- Salt and pepper to taste
- 1 cup heavy cream (optional)
- Croutons for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the fresh peas and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the peas are tender.
- Remove the pot from heat and stir in the fresh mint leaves.
- Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender.
- If using, stir in the heavy cream and season with salt and pepper to taste.
- Serve warm, garnished with croutons and extra mint if desired.
Notes
- For a vegan version, omit the heavy cream or substitute with coconut milk.
- This soup can be served hot or cold, depending on your preference.
