Description

A bright and refreshing soup made with fresh spring peas, perfect for a light lunch or starter.


Ingredients

  • 4 cups fresh peas (or frozen peas)
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup fresh mint leaves
  • Salt and pepper to taste
  • 1 cup heavy cream (optional)
  • Croutons for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the fresh peas and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the peas are tender.
  3. Remove the pot from heat and stir in the fresh mint leaves.
  4. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender.
  5. If using, stir in the heavy cream and season with salt and pepper to taste.
  6. Serve warm, garnished with croutons and extra mint if desired.

Notes

  • For a vegan version, omit the heavy cream or substitute with coconut milk.
  • This soup can be served hot or cold, depending on your preference.
