Ingredients

  • 1 lb ground beef
  • 1/2 cup finely chopped spinach
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix ground beef, spinach, garlic, breadcrumbs, egg, salt, and pepper in a bowl.
  3. Form mixture into 12 meatballs, stuffing each with mozzarella cheese.
  4. Heat olive oil in a skillet over medium heat. Brown meatballs for 2-3 minutes per side.
  5. Transfer meatballs to a baking sheet and bake for 12-15 minutes until cooked through.
  6. Serve warm.

Notes

  • Use fresh spinach for best results.
  • Meatballs can be frozen before baking.
  • For extra flavor, add 1/4 tsp red pepper flakes.
