Ingredients

- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
- 1 tablespoon olive oil
- Chopped green onions for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add diced potatoes, broth, tomatoes, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Blend the soup until smooth, or leave it chunky as desired.
- Serve hot, garnished with green onions.
Notes
- Adjust the spice level by adding more or less chili powder.
- For a creamier texture, add a splash of cream or coconut milk.
- This soup can be stored in the fridge for up to 3 days.
