Description
A flavorful Nigerian chicken stew with a spicy kick, rich in West African flavors. Perfect with rice, plantains, or yam.
Ingredients

- 1 kg chicken, cut into pieces
- 3 tbsp vegetable oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 3 tomatoes, blended
- 2 red bell peppers, blended
- 2 scotch bonnet peppers, blended (adjust for spice)
- 1 tbsp tomato paste
- 1 tsp thyme
- 1 tsp curry powder
- 1 tsp paprika
- 1 chicken bouillon cube
- Salt to taste
- 1 cup chicken stock or water
Instructions
- Heat oil in a pot over medium heat.
- Add onions, garlic, and ginger. Sauté until fragrant.
- Add the chicken pieces and sear until lightly browned.
- Stir in blended tomatoes, bell peppers, and scotch bonnet peppers. Cook for 5 minutes.
- Add tomato paste, thyme, curry powder, paprika, bouillon cube, and salt. Mix well.
- Pour in chicken stock or water. Cover and simmer for 25-30 minutes until chicken is tender.
- Adjust seasoning if needed and serve hot.
Notes
- Use boneless chicken for quicker cooking.
- Reduce scotch bonnet peppers for milder heat.
- Store leftovers in an airtight container for up to 3 days.
