  • 3 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 3 tomatoes, blended
  • 2 red bell peppers, blended
  • 2 scotch bonnet peppers, blended (adjust for spice)
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp curry powder
  • 1 tsp paprika
  • 1 chicken bouillon cube
  • Salt to taste
  • 1 cup chicken stock or water

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onions, garlic, and ginger. Sauté until fragrant.
  3. Add the chicken pieces and sear until lightly browned.
  4. Stir in blended tomatoes, bell peppers, and scotch bonnet peppers. Cook for 5 minutes.
  5. Add tomato paste, thyme, curry powder, paprika, bouillon cube, and salt. Mix well.
  6. Pour in chicken stock or water. Cover and simmer for 25-30 minutes until chicken is tender.
  7. Adjust seasoning if needed and serve hot.
