A rich and spicy Nigerian chicken stew packed with bold flavors. Perfect with rice, yam, or plantains.
Ingredients

- 1 whole chicken, cut into pieces
- 3 cups tomato puree
- 1 large onion, chopped
- 3 scotch bonnet peppers, blended
- 1 red bell pepper, blended
- 4 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tsp thyme
- 1 tsp curry powder
- 1 tsp paprika
- 1/2 cup vegetable oil
- 2 chicken bouillon cubes
- Salt to taste
Instructions
- Season chicken with salt, thyme, curry powder, and garlic. Let marinate for 30 minutes.
- Heat oil in a pot and fry chicken until golden brown. Remove and set aside.
- In the same oil, sauté onions until translucent.
- Add tomato puree, blended peppers, ginger, and bouillon cubes. Cook for 15 minutes.
- Return chicken to the pot and simmer for another 10 minutes.
- Adjust seasoning if needed and serve hot.
Notes
- Adjust pepper quantity based on spice preference.
- Use fresh tomatoes for a brighter taste.
- Store leftovers in an airtight container for up to 3 days.
