Ingredients

  • 1 whole chicken, cut into pieces
  • 3 cups tomato puree
  • 1 large onion, chopped
  • 3 scotch bonnet peppers, blended
  • 1 red bell pepper, blended
  • 4 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tsp thyme
  • 1 tsp curry powder
  • 1 tsp paprika
  • 1/2 cup vegetable oil
  • 2 chicken bouillon cubes
  • Salt to taste

Instructions

  1. Season chicken with salt, thyme, curry powder, and garlic. Let marinate for 30 minutes.
  2. Heat oil in a pot and fry chicken until golden brown. Remove and set aside.
  3. In the same oil, sauté onions until translucent.
  4. Add tomato puree, blended peppers, ginger, and bouillon cubes. Cook for 15 minutes.
  5. Return chicken to the pot and simmer for another 10 minutes.
  6. Adjust seasoning if needed and serve hot.
