  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 4 large flour tortillas
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion, garlic, and bell pepper. Cook for 3 minutes until softened.
  3. Add ground beef and cook until browned, breaking it apart.
  4. Stir in chili powder, cumin, paprika, salt, and black pepper.
  5. Add cooked rice and black beans. Mix well and cook for 2 minutes.
  6. Warm tortillas in a dry pan or microwave for 20 seconds.
  7. Spoon beef mixture onto each tortilla, then top with cheese, sour cream, and salsa.
  8. Fold the sides of the tortilla inward, then roll tightly.
  9. Garnish with fresh cilantro before serving.
