- 1 lb ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 4 large flour tortillas
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion, garlic, and bell pepper. Cook for 3 minutes until softened.
- Add ground beef and cook until browned, breaking it apart.
- Stir in chili powder, cumin, paprika, salt, and black pepper.
- Add cooked rice and black beans. Mix well and cook for 2 minutes.
- Warm tortillas in a dry pan or microwave for 20 seconds.
- Spoon beef mixture onto each tortilla, then top with cheese, sour cream, and salsa.
- Fold the sides of the tortilla inward, then roll tightly.
- Garnish with fresh cilantro before serving.

- Use lean ground beef for a healthier option.
- Adjust spice level by adding more or less chili powder.
