Ingredients

  • 1 cup sparkling water (chilled)
  • 1/2 cup whole milk
  • 2 tsp vanilla extract
  • 1 tbsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract.
  5. In a separate bowl, whisk flour, baking powder, and salt.
  6. Alternately add dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients.
  7. Gently fold in chilled sparkling water until just combined.
  8. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool in pan for 10 minutes, then transfer to a wire rack.

  • Do not overmix the batter after adding sparkling water.
