  • 2 cups buttermilk
  • 1 tablespoon hot sauce (optional)
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine buttermilk and hot sauce. Add chicken pieces, making sure they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.
  2. In another bowl, mix together flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Heat oil in a large cast-iron skillet or deep fryer to 350°F (180°C).
  4. Remove chicken from the buttermilk and let excess drip off. Dredge each piece in the flour mixture, pressing it in to coat well.
  5. Fry chicken in batches, being careful not to overcrowd the pan. Cook for 12 to 15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
