- 1 whole chicken, cut into pieces
- 2 cups buttermilk
- 1 tablespoon hot sauce (optional)
- 2 cups all-purpose flour
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- Vegetable oil for frying
Instructions
- In a large bowl, combine buttermilk and hot sauce. Add chicken pieces, making sure they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.
- In another bowl, mix together flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Heat oil in a large cast-iron skillet or deep fryer to 350°F (180°C).
- Remove chicken from the buttermilk and let excess drip off. Dredge each piece in the flour mixture, pressing it in to coat well.
- Fry chicken in batches, being careful not to overcrowd the pan. Cook for 12 to 15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Drain on paper towels and let rest for a few minutes before serving.
