Instructions

  1. Mix flour and water in a bowl. Let it rest for 30 minutes.
  2. Add sourdough starter and salt. Knead the dough for 10 minutes.
  3. Let the dough rise for 4 hours, folding it every hour.
  4. Shape the dough and place it in a proofing basket. Let it rise for 2 hours.
  5. Preheat the oven to 230°C (450°F).
  6. Transfer the dough to a baking sheet and score the top.
  7. Bake for 30 minutes, then reduce heat to 200°C (400°F) and bake for another 10 minutes.
  8. Cool on a wire rack before slicing.
