- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (14.5 oz) diced tomatoes
- 1 cup vegetable broth
- 1 cup heavy cream
- 1/2 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until onion is translucent.
- Add the diced tomatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the heavy cream and fresh basil. Use an immersion blender to puree the soup until smooth.
- Season with salt and pepper to taste. Serve hot with fresh basil leaves as garnish.
