A light and fluffy pistachio cake perfect for celebrations.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 cup shelled pistachios, finely ground
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a bowl, mix flour, baking powder, salt, and ground pistachios.
- Cream butter and sugar until light and fluffy. Add eggs one at a time.
- Alternate adding dry ingredients and milk to the butter mixture. Stir in vanilla.
- Pour batter into the prepared pan. Bake for 35-40 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, add a pinch of cardamom.
