Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat the butter and sugar until light and fluffy.
- Add the eggs, vanilla, lemon zest, and lemon juice. Mix well.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Roll the dough into 1-inch balls, then roll each ball in the remaining sugar.
- Place the balls on the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
Notes
- For extra lemon flavor, add an additional tablespoon of lemon zest.
- Store cookies in an airtight container for up to 5 days.
