This Smoky Grilled Caesar Salad is a delicious twist on the classic, featuring grilled romaine hearts topped with homemade Parmesan crisps for an added crunch.


Ingredients

  • 2 romaine hearts, halved lengthwise
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 cup Caesar dressing
  • 1 cup croutons
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • Fresh lemon juice, for serving

Instructions

  1. Preheat your grill to medium heat.
  2. Brush the cut sides of the romaine hearts with olive oil and season with salt and pepper.
  3. Place the romaine on the grill, cut side down, and grill for about 2-3 minutes until slightly charred.
  4. Flip the romaine and grill for an additional 1-2 minutes until wilted.
  5. While the romaine is grilling, prepare the Parmesan crisps by preheating your oven to 400°F (200°C).
  6. On a baking sheet lined with parchment paper, place small mounds of grated Parmesan cheese, about 2 tablespoons each, and sprinkle with smoked paprika.
  7. Bake in the preheated oven for 5-7 minutes until golden and crispy. Allow to cool.
  8. Once the romaine is grilled, remove it from the grill and drizzle with Caesar dressing.
  9. Top with croutons and garnish with the Parmesan crisps.
  10. Finish with a squeeze of fresh lemon juice before serving.
