This Smoky Grilled Caesar Salad is a delicious twist on the classic, featuring grilled romaine hearts topped with homemade Parmesan crisps for an added crunch.

- 2 romaine hearts, halved lengthwise
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/2 cup Caesar dressing
- 1 cup croutons
- 1/2 cup grated Parmesan cheese
- 1 teaspoon smoked paprika
- Fresh lemon juice, for serving
Instructions
- Preheat your grill to medium heat.
- Brush the cut sides of the romaine hearts with olive oil and season with salt and pepper.
- Place the romaine on the grill, cut side down, and grill for about 2-3 minutes until slightly charred.
- Flip the romaine and grill for an additional 1-2 minutes until wilted.
- While the romaine is grilling, prepare the Parmesan crisps by preheating your oven to 400°F (200°C).
- On a baking sheet lined with parchment paper, place small mounds of grated Parmesan cheese, about 2 tablespoons each, and sprinkle with smoked paprika.
- Bake in the preheated oven for 5-7 minutes until golden and crispy. Allow to cool.
- Once the romaine is grilled, remove it from the grill and drizzle with Caesar dressing.
- Top with croutons and garnish with the Parmesan crisps.
- Finish with a squeeze of fresh lemon juice before serving.
Notes
- For a vegetarian option, ensure your Caesar dressing is free from anchovies.
- Feel free to add grilled chicken or shrimp for extra protein.
