- 6 large eggs
- 1/2 cup heavy cream
- 1 cup smoked salmon, chopped
- 1 cup cooked potatoes, diced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh chives, chopped
- 2 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk eggs and heavy cream together.
- Stir in smoked salmon, potatoes, dill, chives, salt, and pepper.
- Melt butter in an oven-safe skillet over medium heat.
- Pour the egg mixture into the skillet and cook for 3-4 minutes until edges set.
- Transfer the skillet to the oven and bake for 12-15 minutes until fully set.
- Let cool slightly before slicing and serving.
Notes
- Swap smoked salmon for cooked bacon or ham if preferred.
- Use leftover roasted potatoes for convenience.
